Submarine Sandwich

2 serves

– with Parthenon Green olive spread and kasseri or emmental cheese
– with Parthenon Sliced Kalamata olives and feta cheese

  • 2 whole wheat sub rolls
  • 60g (2 oz) feta cheese
  • 2-3 slices kasseri cheese or emmental cheese
  • 1 tomato, sliced
  • 4-6 cherry tomatoes, sliced
  • 1 tablespoon Parthenon Sliced Kalamata olives
  • 1 tablespoon Parthenon Green Olive Spread
  • 1 tablespoon spring onions, finely chopped
  • 1 tablespoon dill, finely chopped
  • 2 lettuce leaves
  • 4-6 arugula leaves

Split rolls lengthwise and spread each surface with olive spread.

Sub roll 1
Place sliced tomato on bottom half of roll and sprinkle with oregano and dill. Top with feta cheese and Parthenon Sliced Kalamata olives.
Sprinkle once more with oregano and dill.

Sub roll 2
Place kasseri or emmental cheese, sliced cherry tomatoes and arugula leaves.
